  • Busan Pork Soup Guide: How to Order Dwaeji Gukbap and Choose Your Neighborhood

A bowl of dwaeji gukbap can be a simple meal in Busan, but the menu becomes much easier once you understand the difference between meat, offal and rice served separately. This research-based guide helps you choose a neighborhood, read the order and plan a meal without pretending that every restaurant is the same. Research checked: 26 October 2026. This is not a first-hand restaurant review.

    What is in the bowl?

Dwaeji means pork; gukbap combines soup and rice. The dish is closely associated with Busan. Its history is often linked to wartime displacement and regional market cooking, rather than one uncontested inventor. Today, differences in broth, cuts and accompaniments matter more to your order than a single origin story.

For a first meal, decide whether you want meat only or are comfortable with offal. Naejang refers to offal, while seokkeo indicates a mixture whose exact contents depend on the restaurant. Do not assume sundae is vegetarian: the Korean sausage and its filling require checking. Ttaro gukbap means rice served separately, useful if you prefer to control how much rice goes into the soup.

Choose the meal by your route

Our planning recommendation is to choose a restaurant near the part of Busan you are already visiting. A famous address across the city can turn a quick lunch into a long detour. If your day is around Gwangalli and Millak, compare an option there. If you are changing transport in Seomyeon, keep lunch in Seomyeon. If your afternoon is around the old markets, look in the market district. This is an itinerary choice, not a ranking of taste.

    Millak: Subyeon Choego Dwaeji Gukbap

The Korea Tourism Organization lists the Millak main store at 9-32, Gwanganhaebyeon-ro 370beon-gil, Suyeong-gu. Its highlighted dish is hangjeong gukbap, made with pork neck meat. The listing also identifies meat-only and offal soups. Telephone: +82-51-754-9222. It lists round-the-clock opening, but check for exceptions before an early or late visit. Copy the Korean name 수변최고돼지국밥 민락본점 into your map app and confirm the branch before starting directions.

Seomyeon and the market district: two alternatives

Korea’s policy briefing food feature identifies Songjeong 3dae Gukbap at 33, Seomyeon-ro 68beon-gil, Busanjin-gu, and Yangsanjip at 30, Junggu-ro 47beon-gil, Jung-gu. These are alternatives for different travel routes. The feature highlights choices of meat and offal at Songjeong, and a set of soup, rice and boiled pork served separately at Yangsanjip. The feature is older than this guide, so its quoted prices and opening times should not be treated as current.

    Read the price before ordering

We have deliberately not converted an older menu into a current price list. At the entrance, look for the exact dish and whether the price is per person or for a shared plate. A soup bowl, a boiled-pork set and a large shared plate are different orders. If a budget is important, confirm the price before sitting down. Save a screenshot of the restaurant name rather than relying on a translated search result.

Useful phrases you can show the staff

고기만 주세요 — Meat only, please.
밥 따로 주세요 — Rice separately, please.
이 메뉴에 내장이 들어가나요? — Does this dish contain offal?
가격이 얼마예요? — How much is it?
    포장되나요? — Is takeaway available?

Season a little at a time

Taste the soup before adding condiments. Salted shrimp, spicy paste and chives may be offered, but the right amount depends on the broth and your preference. Add small amounts and taste again. If you have a shellfish allergy, do not add shrimp seasoning; ask about the broth, side dishes and preparation as well. Pork soup is not a suitable default choice for a pork-free diet, and a meat-free topping does not establish that a broth is vegetarian.

A practical plan and a backup

Before leaving, check the correct branch, current menu and last-order information. On arrival, ask how the queue works; do not assume an app booking and an in-person waiting list are interchangeable. Keep one nearby alternative saved. If a long queue would disrupt a train or tour booking, use the alternative rather than turning the meal into the day’s main logistical risk. This is our suggested planning method, not a promise about queue lengths.
